I wrote a recipe for the mock chocolate mousse. It is not the vegan version as it has Greek yoghurt as the main ingredient.
To make 3 servings in glasses:
 
In each glass, put 1 tablespoon chia seeds with 4 tablespoons filtered water. Stir and wait for 5 minutes, and stir again. Put in the fridge to set.
2 cups Greek Yoghurt
1 cup cacao powder
1/2 cup Maple Syrup
1 tablespoon Vanilla Extract or essence
 
Blend ingredients all together and make sure it tastes like chocolate. You may need to add more syrup to remove the yoghurt taste, and more cacao to make it more chocolate.
 
Once the chia seeds gel has set in the glasses, pour on the chocolate mixture and set in the fridge for several hours.
 
On serving, top with toasted nuts and berries of your choice ie. walnuts and raspberries.
