400g Elbow macaroni or other tubular pasta

Olive oil (for pasta)

100g Unsalted butter

2 tbsp Plain flour

3 cups milk (can be any milk ie. soy, nut, etc)

5 cups of mixed cheese, grated: Cheddar, Tasty (preferred) and Gruyere

Salt and pepper

1 ½ cups Panko crumbs

½ cup Parmesan, grated

1 tsp smoked paprika

Fresh parsley, chopped

½ broccoli, chopped - optional

½ red capsicum, chopped – optional

1/2 cup peas - optional
