  • 2 potatoes or sweet potatoes
  • 2 carrots
  • 1/4 pumpkin
  • 2 parsnips
  • 4 cloves garlic
  • 1 onion or 4 shallots
  • 2 zucchinis
  • 4 cherry tomatoes
  • 20g pumpkin seeds
  • 1 sprig rosemary
  • 20g butter

Serve with:

  • steamed broccolini or beans with toasted almonds
  • kale leaves or silverbeet (with bacon if no meat)
  • green cabbage or bok choy leaves in garlic butter

Tips:

If you want the potatoes crisp, steam them on high for 20 minutes before roasting.

You could sprinkle some paprika, turmeric & pepper, curry powder or seasoning on the vegetables before roasting for more flavours.
