I have been making vegan chocolate mousse several times now. They are yummy and healthy! They do not taste too rich like some ordinary chocolate mousse does, and I feel great inside.
Everyone who was served the mousse loved them. My mother wanted another one!
To make 3 servings:
1 ripe avocado
1/4 cup cacao powder
1/4 cup maple syrup
1/4 cup almond or nut milk
2 teaspoons vanilla extract / essence
1 tablespoon ground cinnamon (optional)
Add 1 tablespoon chia seeds (optional)
Slowly stir until contents blend, then whisk or blend until smooth and shiny. Put in small bowls and set in the fridge.
When serving, top with toasted nuts and berries ie. walnuts, almonds and raspberries.
