Scalloped Potato Dish
Preparation time: 20 minutes
Cooking time: 45 – 60 minutes
Serves: 5-6

Ingredients
8 potatoes (Desiree or Golden Delight potatoes) thinly sliced
1 red onion, thinly sliced
1 red capsicum, thinly sliced
1 green capsicum, thinly sliced
2 cloves garlic, minced
1 tablespoon oregano herbs
300g tasty cheese, grated
20g butter or coconut oil
300ml full cream (Zymil if lactose-free) or Greek yoghurt
Pinch of nutmeg
Salt and pepper
1/4 teaspoon paprika
Topping
Parsley, chopped
Spring onion (green parts), chopped
Preparation
- Grease the casserole dish with butter or coconut oil
 - Put potato slices on bottom covering all areas
 - Put onion, capsicums and garlic covering the potato slices on the bottom
 - Repeat steps 2 and 3 until all in the dish
 - Pour in the cream or yoghurt with nutmeg mixed in
 - Sprinkle salt and pepper around the top
 - Cover with cheese
 - Sprinkle with paprika and oregano herbs on top
 - Cover with foil
 - Put in oven and bake for 45 minutes
 - Take foil off and bake for another 10 minutes
 - Serve with parsley or spring onion sprinkled on the top
