Pan-fry Vegetables Side Dish
Preparation time: 15 minutes
Cooking time: 25 minutes
Serves: 2 people
Ingredients
1 tablespoon olive or coconut oil
1 potato, diced into 1cm blocks
1 carrot, chopped into 1cm blocks
1 onion (red or brown), diced into 1cm blocks
Optional – ¼ teaspoon of curry, turmeric, paprika
2-3 cloves garlic, chopped in small pieces
½ sprig of rosemary, finely chopped (one teaspoon)
50ml water
Salt and pepper
Instructions
- Heat frypan on medium heat
- Add oil and heat it up
- Add potato and fry for 5 mins, stirring sometimes
- Add carrot and fry for 5 mins, stirring
Optional – add spices and stir well - Add onion, garlic and rosemary, and fry for 5 mins
- Add water to mix everything well with the spices. Do not put in too much water.
- Add salt and pepper
- Cook for few mins, stirring
- Serve as a side dish with main course, or eat as snacks
