Pan-fry Vegetables Side Dish

Preparation time: 15 minutes

Cooking time: 25 minutes

Serves: 2 people

1 tablespoon olive or coconut oil

1 potato, diced into 1cm blocks

1 carrot, chopped into 1cm blocks

1 onion (red or brown), diced into 1cm blocks

Optional – ¼ teaspoon of curry, turmeric, paprika

2-3 cloves garlic, chopped in small pieces

½ sprig of rosemary, finely chopped (one teaspoon)

50ml water

Salt and pepper


  1. Heat frypan on medium heat
  2. Add oil and heat it up
  3. Add potato and fry for 5 mins, stirring sometimes
  4. Add carrot and fry for 5 mins, stirring
    Optional – add spices and stir well
  5. Add onion, garlic and rosemary, and fry for 5 mins
  6. Add water to mix everything well with the spices. Do not put in too much water.
  7. Add salt and pepper
  8. Cook for few mins, stirring
  9. Serve as a side dish with main course, or eat as snacks
