Pesto Sauce

Preparation time: 15 minutes

Cooking time: 15 minutes

Serves: 2 people

2 cup herb leaves – basil or coriander (or both) washed, dried

3-4 garlic cloves, finely chopped or minced

½ cup pine nuts (preferred) or walnuts or cashews or almonds or mixed, lightly toasted

½ cup olive oil

1 tsp lemon juice

Salt and pepper


  1. Put nuts in a food processor and roughly pulse several times until it is not chunky but not too fine. You will need a spatula to push the blended mix back into the centre after each blend
  2. Add the garlic cloves and pulse several times
  3. Add the herbs and blend shortly
  4. Add small part of oil and blend several times
  5. Add lemon juice and blend
  6. Add salt & pepper, blend and taste
  7. Once flavour is balanced, add rest of oil and blend well
  8. Put in a sterilised jar and store in the fridge for up to one week. Keep the top covered with oil or use glad wrap
  9. Serve with pasta and grated parmesan cheese
