Pesto Sauce

Serves: 2 people
Ingredients
2 cup herb leaves – basil or coriander (or both) washed, dried
3-4 garlic cloves, finely chopped or minced
½ cup pine nuts (preferred) or walnuts or cashews or almonds or mixed, lightly toasted
½ cup olive oil
1 tsp lemon juice
Salt and pepper
Preparation
- Put nuts in a food processor and roughly pulse several times until it is not chunky but not too fine. You will need a spatula to push the blended mix back into the centre after each blend
- Add the garlic cloves and pulse several times
- Add the herbs and blend shortly
- Add small part of oil and blend several times
- Add lemon juice and blend
- Add salt & pepper, blend and taste
- Once flavour is balanced, add rest of oil and blend well
- Put in a sterilised jar and store in the fridge for up to one week. Keep the top covered with oil or use glad wrap
- Serve with pasta and grated parmesan cheese
