Tomato Sauces
Preparation time: 15 minutes
Cooking time: 25 minutes
Serves: Makes 2-3 jars of sauces
Ingredients
2 tablespoons olive or coconut oil
2 large tubs of cherry tomatoes, washed and halved
1 brown onion, thinly sliced
1 red onion, thinly sliced
4 cloves garlic, finely chopped
1 red chilli, finely chopped
1 cup red wine
1 tablespoon turmeric
Salt and pepper
Handful of basil leaves, washed
Instructions
- Heat frypan on medium heat
- Add oil and heat it up
- Add a handful of tomatoes and cook for 5 mins covered, stirring
- Add onion for 2 mins, stirring
- Add garlic for 2 mins, stirring
- Add chilli for 2 mins, stirring
- Add red wine, turmeric, salt and pepper
- Add the rest of the tomatoes
- Cover and cook for 10 mins
- Stir well and cook another 10 mins
- Mash everything with a masher
- Add basil
- Taste and add more salt and pepper if need
- Cook another 10 mins, uncovered
- Stir well until everything is well cooked
To make a puree, strain contents into a jar with a strainer
To make a tomato sauce (or passata), blend contents with a stick blender and pour into a jar
To make a pasta sauce, pour contents into a jar.
Store jar in fridge for up to a week or in the freezer.
Note
Use sterilised jars. Wash, rinse, boil and air-dry jars in the oven to sterilise
