Vegetable Soup
Preparation time: 15 minutes
Cooking time: 45 minutes
Serves: 2 people
Ingredients:
2 tablespoons olive or coconut oil
2 potatoes, diced
1 onion, diced
2 carrots, diced
4 celery stalks (with leaves), chopped
1 zucchini, diced
1 broccoli, chopped
4 garlic cloves, diced
10 cherry tomatoes, washed and halved
Salt and pepper
1 tsp ginger
½ tsp chilli (or more if you like it hot)
1 tsp turmeric
1 tsp coriander
Preparation
- Heat a large pot on medium heat
- Add oil and heat it up
- Add potatoes and cook for 5 mins, stirring
- Add onion, carrots, celery, zucchini, broccoli and stir everything well
- Add garlic and tomatoes, and stir well
- Add salt and pepper, ginger, chilli, turmeric, and coriander
- Stir everything well
- Taste to make sure you like the flavours
- Add clean water to level at the top of the vegetables
- Cover and cook for 10 mins
- Stir everything well
- Turn heat down to low, cover and cook for 30 mins
- Let it cool for 10 mins
- Blend everything with a blender
- Serve
Note: Add more water if you like the soup more watery.
