Vegetable Soup

Preparation time: 15 minutes

Cooking time: 45 minutes

Serves: 2 people

Ingredients:

2 tablespoons olive or coconut oil

2 potatoes, diced

1 onion, diced

2 carrots, diced

4 celery stalks (with leaves), chopped

1 zucchini, diced

1 broccoli, chopped

4 garlic cloves, diced

10 cherry tomatoes, washed and halved

Salt and pepper

1 tsp ginger

½ tsp chilli (or more if you like it hot)

1 tsp turmeric

1 tsp coriander

Preparation

  1. Heat a large pot on medium heat
  2. Add oil and heat it up
  3. Add potatoes and cook for 5 mins, stirring
  4. Add onion, carrots, celery, zucchini, broccoli and stir everything well
  5. Add garlic and tomatoes, and stir well
  6. Add salt and pepper, ginger, chilli, turmeric, and coriander
  7. Stir everything well
  8. Taste to make sure you like the flavours
  9. Add clean water to level at the top of the vegetables
  10. Cover and cook for 10 mins
  11. Stir everything well
  12. Turn heat down to low, cover and cook for 30 mins
  13. Let it cool for 10 mins
  14. Blend everything with a blender
  15. Serve

Note: Add more water if you like the soup more watery.
